To be fair, the old Jedi order was openly stealing children from their families in order to “train” them. and they historically did NOT treat the Sith well (war crimes anyone ?). It doesn’t make the Empire all right, but arguably those younglings weren’t “better off” being Jedi. Not to mention the night sisters… these are all theocracies brainwashing children.
1. There was always a right of refusal, and raising Force sensitive children in anything other than a culture used to dealing with that could often be… difficult. Furthermore, while the Jedi Order was imperfect, Jedi always – ALWAYS – had the choice to leave if they wished to.
2. The Sith as an order and political entity entered the galactic scene as a conquering empire that made the Nazis and ISIS look civilised, their society built on open slavery and insane social darwinism. Anyone in their way was either going to become their willing servant, their slave, or their passing amusement if they were kind enough to let that person die. They continued in this pattern for millennia. They deserved what they got, and then some.
3. The Nightsisters were a profoundly messed up culture in many ways. But not all. And for the most part, if the galaxy left them alone, they left the galaxy alone. For the most part.

1. The Sith were, as an organisation, an ideology, and a political entity, something that made the Nazis and ISIS look civilised. Their first reintroduction to the galactic scene was a genocidal conquest where torture, murder, and countless horrors were not just weapons of war, but part of their very ideology. Anyone in their way had the choice to either join up, be enslaved, or be a passing amusement before they died. They continued in this pattern for millennia. They deserved everything they got and then some.
2. People always had the right to refuse. Jedi always had the right to leave the Order. They could find out about their families, if they wished to. The Jedi were not perfect, but they always gave something the Sith didn’t: a choice.
3. The Nightsisters were… complicated to say the least. But they didn’t deserve what they got.
